Limoncello

Limoncello's core ingredient is lemon zest or lemon peels without the pith and produced commercially but is also a popular homemade liquer. The oil in the pith is extracted by soaking the pith in ethanol which acts as a solvent releasing oil and flavours which are then mixed with simple syrup. Traditionally Sorrento ( St Theresa ) Lemons are used, but production is widespread in Italy and now in the USA. It is regarded as the second most popular liquer in Italy after Campari.
